A refreshing and light summer salad combining the sweetness of watermelon, the tanginess of feta cheese, and the freshness of mint. This Feta Watermelon Salad is a perfect side dish for any warm-weather gathering.

Ingredients

For the Salad:

  • 4 cups seedless watermelon, cubed
  • 1 cup cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh mint leaves, chopped

For the Dressing:

  • 1 tablespoon olive oil
  • 1 tablespoon lime juice or balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the watermelon, cucumber, red onion, and mint. Gently fold in the crumbled feta cheese.
  2. Drizzle with olive oil and lime juice (or balsamic glaze), then sprinkle with salt and black pepper.
  3. Toss lightly to combine. Serve immediately or chill for 10–15 minutes before serving.
