Ingredients

Units Scale

Sandwich Ingredients:

  • 4 slices sourdough or whole-grain bread
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella or Monterey Jack cheese
  • 1 cup fresh baby spinach
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 tablespoons softened butter
  • Pinch of black pepper

Instructions

  1. Sauté Spinach: In a skillet over medium heat, warm olive oil and sauté garlic for 30 seconds. Add spinach and cook until wilted. Remove from heat and cool slightly.
  2. Prepare Cheese Mixture: Combine feta, mozzarella, sautéed spinach, and black pepper in a bowl.
  3. Assemble Sandwiches: Spread butter on one side of each bread slice. Place two slices butter-side down, divide cheese-spinach mixture, and top with remaining bread, butter-side up.
  4. Grill: Heat a skillet, cook sandwiches for 3–4 minutes per side until golden brown and cheese is melted. Slice and serve warm.

Notes

  • Add sun-dried tomatoes or olives for extra Mediterranean flavor.
  • For a crispier crust, grill with a little olive oil instead of butter.
