Cake:

  • Zest of 2 oranges

  • 1/2 cup chopped dark chocolate or chocolate chips
  • 1/2 cup chopped candied orange peel or dried cranberries
  • 1/2 cup chopped toasted nuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan or loaf pan with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the orange zest, orange juice, and vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped chocolate and candied orange peel (and nuts, if using).
  4. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  5. Cool and decorate: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or drizzle with melted chocolate before serving.
