  • 2 cups whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika

  • Chopped green onions
  • Extra shredded cheddar

Instructions

  1. Cook Bacon: In a large pot over medium heat, cook chopped bacon until crispy. Remove and set aside, leaving some bacon fat in the pot.
  2. Sauté Onion and Garlic: Add diced onion to the pot and sauté until soft. Stir in minced garlic and cook briefly.
  3. Create Roux: Sprinkle flour into the pot and stir to create a roux. Slowly whisk in chicken broth until smooth.
  4. Add Potatoes: Add diced potatoes to the pot and simmer until tender.
  5. Season and Blend: Stir in milk, salt, pepper, and paprika. Blend the soup slightly, leaving some potato chunks.
  6. Finish Soup: Stir in cheddar, sour cream, and half the bacon until creamy. Serve topped with remaining bacon, green onions, cheese, and sour cream.
