  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced

Seasonings:

  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sauté vegetables: In a large skillet, heat olive oil over medium heat. Sauté the bell peppers and onion for 5–6 minutes until soft.
  3. Mix ingredients: In a mixing bowl, combine chicken, sautéed vegetables, diced tomatoes, seasonings, sour cream, and 1 cup of cheddar cheese.
  4. Prepare casserole: Spread the mixture into a greased 9×13-inch baking dish. Top with remaining cheese.
