No‑bake, bite‑sized energy balls made with oats, nut butter, flaxseed, and honey—perfect for a quick, healthy snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter (or almond butter)
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed or chia seeds
  • 1/4 cup dark chocolate chips or cacao nibs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional mix‑ins: 2 tablespoons shredded coconut, 2 tablespoons chopped nuts, 1 tablespoon mini chocolate chips

Instructions

  1. In a large bowl, combine oats, flaxseed (or chia), and salt.
  2. Add peanut butter, honey, and vanilla extract; stir until well mixed.
  3. Fold in chocolate chips and any optional mix‑ins.
  4. Chill mixture in the fridge for 10 minutes to firm up.
  5. Use a tablespoon or small cookie scoop to portion mixture and roll into 1‑inch balls.
  6. Place on a parchment‑lined plate or tray; chill for at least 30 minutes to set.
  7. Store finished energy balls in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.

  • Make gluten‑free by using certified gluten‑free oats.
  • Customize with different nut butters: almond, cashew, or sunflower seed butter (for nut‑free).
