  • 1/4 cup crumbled feta cheese
  • 2 tablespoons milk (dairy or non-dairy)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • olive oil spray or liners for muffin tin

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and lightly grease a 12-cup mini muffin tin or use silicone liners.
  2. Prepare Egg White Mixture: In a medium bowl, whisk together the egg whites, milk, salt, and pepper until well combined.
  3. Fill Muffin Cups: Evenly divide the chopped bell pepper, spinach, and feta cheese among the muffin cups. Pour the egg white mixture over the vegetables, filling each cup about ¾ full.
  4. Bake: Bake for 18–20 minutes, or until the egg whites are set and slightly golden around the edges.
  5. Cool and Serve: Let cool for a few minutes before removing from the tin. Serve warm or store in the fridge for up to 4 days.
