  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 9 oz refrigerated cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • Salt and black pepper, to taste

For Garnish:

  • Grated Parmesan
  • Chopped basil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until soft. Stir in the garlic and cook for 30 seconds until fragrant.
  2. Pour in the chicken broth and diced tomatoes with their juices. Stir in Italian seasoning and red pepper flakes if using. Bring to a gentle boil.
  3. Add the tortellini and cook according to package instructions, usually 5–7 minutes, until tender. Reduce heat to low, stir in the chopped spinach, and cook just until wilted. Season with salt and pepper to taste.
  4. Ladle into bowls and top with grated Parmesan and fresh basil if desired. Serve warm.
