  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 teaspoon ground cumin
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can kidney beans (drained and rinsed)
  • 1 (15 oz) can corn (drained)
  • 1 (15 oz) can diced tomatoes (undrained)
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 2 cups beef broth or chicken broth
  • Salt and pepper to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Tortilla chips
  • Sliced jalapeños
  • Chopped cilantro

Instructions

  1. Heat olive oil: In a large pot over medium heat, add olive oil.
  2. Cook onion and garlic: Add diced onion and cook until softened. Stir in garlic and cook briefly.
  3. Cook meat: Add ground beef or turkey and brown it, breaking it apart.
  4. Add seasoning and ingredients: Stir in taco seasoning, cumin, beans, corn, tomatoes, and broth.
  5. Simmer: Bring to a simmer and cook for 15–20 minutes.
  6. Season and serve: Adjust seasoning with salt and pepper. Serve hot with optional toppings.
