Noodles:

  • 8 oz spaghetti or rice noodles

Peanut Sauce:

  • 2 tablespoons sesame oil or vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 12 teaspoons sriracha or chili garlic sauce (to taste)
  • 1/4 cup warm water (to thin sauce)

Additional Ingredients:

  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Cook the Noodles: Cook the noodles according to package directions, then drain and set aside.
  2. Make the Peanut Sauce: In a large skillet or wok, heat oil over medium heat. Sauté garlic and ginger until fragrant. Add peanut butter, soy sauce, rice vinegar, honey, sriracha, and water. Stir until smooth and heated through.
  3. Combine and Serve: Add cooked noodles to the skillet, toss to coat. Stir in carrots and bell pepper, cook briefly. Serve topped with green onions, peanuts, cilantro, and lime wedges.

Notes

  • Add grilled chicken, tofu, or shrimp for extra protein.
