Description

A quick and flavorful spicy chicken burrito recipe perfect for busy weeknights. Loaded with seasoned chicken, rice, beans, and spicy sauce, wrapped in a soft tortilla.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked white rice
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 4 large flour tortillas

Instructions

  1. In a skillet, heat olive oil over medium heat. Add shredded chicken, chili powder, cumin, paprika, cayenne, garlic powder, salt, and pepper. Cook for 5 minutes until heated through and spices are well blended.
  2. Warm the tortillas in the microwave or a dry skillet for easier folding.
  3. Lay a tortilla flat and layer with rice, black beans, seasoned chicken, salsa, cheddar cheese, and a dollop of sour cream.
  4. Sprinkle with chopped cilantro if using.
  5. Fold in the sides and roll up the tortilla tightly into a burrito.
  6. Repeat with remaining tortillas and filling.
  7. Serve warm, optionally with extra salsa or hot sauce on the side.

Notes

  • For extra heat, add chopped jalapeños or a dash of hot sauce to the filling.
  • Can substitute Greek yogurt for sour cream for a healthier option.
