2cups cooked chicken breast, shredded
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
Salt and pepper to taste
1cup cooked white rice
1cup canned black beans, drained and rinsed
1/2cup salsa
1/2cup shredded cheddar cheese
1/4cup sour cream
1/4cup chopped fresh cilantro (optional)
4 large flour tortillas
Instructions
In a skillet, heat olive oil over medium heat. Add shredded chicken, chili powder, cumin, paprika, cayenne, garlic powder, salt, and pepper. Cook for 5 minutes until heated through and spices are well blended.
Warm the tortillas in the microwave or a dry skillet for easier folding.
Lay a tortilla flat and layer with rice, black beans, seasoned chicken, salsa, cheddar cheese, and a dollop of sour cream.
Sprinkle with chopped cilantro if using.
Fold in the sides and roll up the tortilla tightly into a burrito.
Repeat with remaining tortillas and filling.
Serve warm, optionally with extra salsa or hot sauce on the side.
