- 2 cups cooked chicken breast, shredded
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cooked white rice
- 1 cup canned black beans, drained and rinsed
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
- 4 large flour tortillas
Instructions
- In a skillet, heat olive oil over medium heat. Add shredded chicken, chili powder, cumin, paprika, cayenne, garlic powder, salt, and pepper. Cook for 5 minutes until heated through and spices are well blended.
- Warm the tortillas in the microwave or a dry skillet for easier folding.
- Lay a tortilla flat and layer with rice, black beans, seasoned chicken, salsa, cheddar cheese, and a dollop of sour cream.
- Sprinkle with chopped cilantro if using.
- Fold in the sides and roll up the tortilla tightly into a burrito.
- Repeat with remaining tortillas and filling.
- Serve warm, optionally with extra salsa or hot sauce on the side.
Notes
- For extra heat, add chopped jalapeños or a dash of hot sauce to the filling.
- Can substitute Greek yogurt for sour cream for a healthier option.
- Use brown rice or quinoa for added fiber and nutrients.
