Shrimp and Sauce

Instructions
- Heat the oil and sauté onion: Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3 to 4 minutes until the onion softens and becomes translucent.
- Add garlic and cook briefly: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to let it burn.
- Prepare the tomato sauce: Add the diced tomatoes, tomato paste, red pepper flakes (if using), dried oregano, salt, and black pepper to the skillet. Stir well and let the sauce simmer for 5 to 7 minutes until it thickens slightly.
- Cook the shrimp: Add the peeled and deveined shrimp to the tomato sauce. Cook for 3 to 4 minutes, stirring occasionally, until the shrimp turn pink and opaque throughout.
- Add feta and melt: Sprinkle the crumbled feta cheese over the shrimp and cover the skillet. Let it sit for 1 to 2 minutes to allow the cheese to soften gently without fully melting.
- Finish with parsley and lemon juice: Remove the skillet from heat, then stir in the chopped fresh parsley and fresh lemon juice. This adds a fresh, bright flavor to the dish.
- Serve: Serve the shrimp saganaki immediately with crusty bread on the side for dipping into the rich tomato and cheese sauce.
