1cup (2 sticks) unsalted butter
2 1/4cups packed light brown sugar
1cup light corn syrup
1 (14 oz) can sweetened condensed milk
1/2 teaspoon salt
1 teaspoon pure vanilla extract
Flaky sea salt, for topping
Instructions
Prepare the Pan: Line an 8×8-inch baking pan with parchment paper.
Melt Butter: In a saucepan over medium heat, melt butter.
Mix Ingredients: Stir in brown sugar, corn syrup, condensed milk, and salt. Boil gently, stirring constantly until 245°F.
Add Vanilla: Remove from heat, stir in vanilla.
Pour and Set: Pour caramel into pan, let sit, sprinkle with sea salt, cool for 2-3 hours, cut into squares, and wrap if desired.
Notes
Use a candy thermometer for best results.
For a softer caramel, stop cooking at 240°F; for firmer caramels, go up to 250°F.
