1/2cup unsalted butter, melted
1cup brown sugar, packed
1/2cup peanut butter
1 large egg
1 tsp vanilla extract
1cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1cup semi-sweet chocolate chips
Instructions
Preheat the oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper.
In a large bowl, mix the melted butter and brown sugar until smooth.
Add the peanut butter, egg, and vanilla extract, mixing until well combined.
Stir in the flour, baking powder, and salt until just combined.
Fold in the chocolate chips.
Spread the batter evenly into the prepared pan.
Bake for 20-25 minutes or until the edges are golden and a toothpick inserted into the center comes out mostly clean.
Cool completely before cutting into bars.
Notes
Use creamy or crunchy peanut butter based on your preference.
Do not overbake to keep the bars soft and chewy.
