  • 2 tbsp vegetable oil
  • 2 1/4 cups chicken broth
  • 1 cup tomato sauce (or blended tomatoes)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp salt

Optional Ingredients:

  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro
  • lime wedges for serving

Instructions

  1. Heat the oil: In a large skillet over medium heat, heat vegetable oil.
  2. Toast the rice: Add the rice and cook for about 5 minutes until lightly golden.
  3. Add ingredients: Stir in onion if using, then add chicken broth, tomato sauce, and seasonings. Bring to a boil.
  4. Simmer: Reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  5. Rest and serve: Remove from heat, let sit covered for 5 minutes. Fluff with a fork, stir in cilantro if desired, and serve with lime wedges.
