Dough:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 package (3 ounces) lime-flavored gelatin
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For Rolling:

  • Green sanding sugar (optional)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dough: In a large mixing bowl, cream butter, granulated sugar, and lime gelatin until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, mixing until combined.
  4. Shape Cookies: Roll dough into 1-inch balls and, if desired, roll in green sanding sugar. Place on prepared baking sheets about 2 inches apart. Flatten slightly with the bottom of a glass.
  5. Bake: Bake for 8–10 minutes, or until edges are set. Cool on baking sheets for 2 minutes before transferring to a wire rack to cool completely.

Notes
