Instructions
Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Mix Dough: In a large mixing bowl, cream butter, granulated sugar, and lime gelatin until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, mixing until combined.
Shape Cookies: Roll dough into 1-inch balls and, if desired, roll in green sanding sugar. Place on prepared baking sheets about 2 inches apart. Flatten slightly with the bottom of a glass.
Bake: Bake for 8–10 minutes, or until edges are set. Cool on baking sheets for 2 minutes before transferring to a wire rack to cool completely.
Notes
You can swap lime gelatin for any other flavor to make colorful variations.
