Lemon Curd:

  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 6 tablespoons unsalted butter, cut into cubes
  • Pinch of salt

Instructions

  1. Prepare the Lemon Curd: In a medium saucepan, whisk together lemon juice, lemon zest, sugar, eggs, and salt until smooth.
  2. Cook the Mixture: Place the saucepan over medium-low heat and add the butter cubes. Cook while whisking constantly for about 8–10 minutes, until the mixture thickens and coats the back of a spoon. Do not allow it to boil.
  3. Strain and Cool: Once thickened, remove from heat and strain the lemon curd through a fine mesh sieve into a clean bowl to remove zest and any bits of cooked egg. Let it cool slightly.
  4. Chill and Store: Transfer the lemon curd to a jar or airtight container. Refrigerate for at least 1 hour before using. It will continue to thicken as it chills.
