Chicken:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil

Sauce:

  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Garnish:

  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Season the chicken: Season the chicken with salt, pepper, and garlic powder on both sides.
  2. Sear the chicken: Heat olive oil in a large skillet, sear the chicken for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. Make the sauce: In the same skillet, cook minced garlic, then add chicken broth, lemon juice, honey, and Dijon mustard. Simmer for 2-3 minutes. Stir in cornstarch slurry and simmer until sauce thickens slightly.
  4. Finish the dish: Return chicken to the skillet, spoon sauce over the top, and cook for another 2 minutes. Garnish with parsley and lemon slices before serving.
