1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 tablespoons olive oil
Sauce:
3 cloves garlic (minced)
1/2cup chicken broth
1/4cup freshly squeezed lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1 teaspoon cornstarch mixed with 1 tablespoon water
Garnish:
1 tablespoon chopped fresh parsley (optional)
lemon slices for garnish
Instructions
Season the chicken: Season the chicken with salt, pepper, and garlic powder on both sides.
Sear the chicken: Heat olive oil in a large skillet, sear the chicken for 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
Make the sauce: In the same skillet, cook minced garlic, then add chicken broth, lemon juice, honey, and Dijon mustard. Simmer for 2-3 minutes. Stir in cornstarch slurry and simmer until sauce thickens slightly.
Finish the dish: Return chicken to the skillet, spoon sauce over the top, and cook for another 2 minutes. Garnish with parsley and lemon slices before serving.
Notes
This dish pairs well with rice, couscous, or roasted vegetables.
Chicken thighs offer more flavor and juiciness, but breasts can be used if cooked carefully.
