  • 1 pound ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups low-sodium chicken or beef broth
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz lasagna noodles, broken into pieces

For the Cheese Mixture:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Prepare the Soup: In a large pot, heat olive oil over medium-high heat. Add ground beef or sausage and cook until browned, breaking it into crumbles. Drain excess fat if needed.
  2. Cook Aromatics: Add diced onion and cook until softened, then stir in garlic and cook for an additional 30 seconds.
  3. Add Ingredients: Stir in marinara sauce, diced tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
  4. Cook Noodles: Add broken lasagna noodles and cook for 12–15 minutes, or until tender, stirring occasionally.
  5. Prepare Cheese Mixture: In a small bowl, combine ricotta, mozzarella, and Parmesan cheeses.
  6. Serve: Ladle soup into bowls, top with a dollop of the cheese mixture, garnish with fresh basil, and serve hot.

Notes

  • For extra flavor, use a combination of beef and sausage.
  • If making ahead, cook the noodles separately to prevent them from absorbing too much broth.
  • For added nutrition, consider incorporating spinach or zucchini.
