  • 6 ounces ramen noodles or other Asian noodles

Sauce:

  • 1 tablespoon sesame oil
  • 1 cup chopped kimchi (plus 2 tablespoons kimchi juice)
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon gochujang (Korean chili paste, optional)
  • 1 teaspoon sugar

Garnish:

  • 1 green onion, sliced
  • 1 teaspoon toasted sesame seeds
  • Fried egg or tofu for topping (optional)

Instructions

  1. Cook the noodles: Prepare noodles according to package instructions. Drain and set aside.
  2. Sauté aromatics: In a skillet over medium heat, add sesame oil. Sauté garlic and ginger until fragrant. Add chopped kimchi and cook until slightly caramelized.
  3. Add sauce: Stir in soy sauce, kimchi juice, gochujang, and sugar. Toss in cooked noodles and heat through.
