  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 pound boneless skinless chicken breasts or thighs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 2 cups egg noodles
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil: In a large soup pot over medium heat, heat olive oil.
  2. Sauté vegetables: Add onion, carrots, and celery. Sauté for 5–6 minutes until vegetables soften. Add garlic and cook for another 30 seconds.
  3. Add broth and chicken: Pour in chicken broth, add chicken, thyme, parsley, pepper, and salt. Bring to a boil, then simmer covered for 20 minutes.
  4. Shred chicken: Remove chicken, shred, and return to the pot. Stir in egg noodles and cook for 8–10 minutes until tender.
  5. Adjust seasoning: Taste and adjust seasoning. Garnish with parsley before serving.
