Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter (plus more for the pan)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla extract if using. Pour the wet ingredients into the dry ingredients and stir just until combined; the batter may be slightly lumpy. Let the batter rest for 5 minutes.

  3. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  4. Pour ¼ cup of batter per pancake onto the hot surface. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes.
  5. Flip and cook another 1–2 minutes until golden brown and cooked through.
  6. Serve warm with your favorite toppings.

Notes

  • For fluffier pancakes, do not overmix the batter.
  • You can fold in blueberries, chocolate chips, or sliced bananas before cooking.
  • Leftover pancakes can be frozen and reheated in a toaster or oven.
