A quick and delicious pasta dish featuring crispy fried halloumi served over spaghetti tossed in a rich, creamy tomato sauce with sun-dried tomatoes, roasted peppers, and fresh herbs. Perfect for a comforting weeknight meal.

- 400g spaghetti
Halloumi
- 225g halloumi, sliced
- 2 tbsp olive oil
Tomato Sauce
- 400g cherry tomatoes (canned or fresh)
- 50g sun-dried tomatoes, chopped
- 100g roasted peppers, sliced
- 1 tsp garlic and tomato seasoning
- 100ml cream
- Zest and juice of 1 lemon
- 2 tbsp fresh basil, chopped
- 2 tbsp fresh parsley, chopped

- Grated Parmesan (optional, for serving)
Instructions
- Prepare Halloumi: Slice the halloumi into 1 cm thick slices. Heat 2 tablespoons of olive oil in a non-stick pan over medium heat and fry the halloumi slices until golden and crispy on both sides. Remove from the pan and set aside.
- Start Tomato Sauce: In the same pan, add the cherry tomatoes and gently burst them with a knife to release their juices. Stir in 1 teaspoon of garlic and tomato seasoning, then let the mixture simmer gently to develop flavor.
- Add Additional Ingredients: Stir in the chopped sun-dried tomatoes and the sliced roasted peppers. Pour in 100ml of cream and continue to simmer the sauce for 3–4 minutes. Add the zest and juice of one lemon. Adjust the sauce consistency with a splash of water or additional cream if necessary.
- Cook Spaghetti: Cook the spaghetti according to the package instructions until al dente. Drain the pasta and toss it in the rich tomato sauce until evenly coated. Mix in the chopped fresh basil and parsley for freshness.
- Serve: Plate the pasta and top with the crispy halloumi slices. Sprinkle with grated Parmesan cheese if desired for an extra savory touch. Serve immediately while warm.

- Use either fresh or canned cherry tomatoes depending on availability.
- Adjust cream amount for a lighter or richer sauce.
- Parmesan cheese is optional and can be omitted for a vegetarian version.
- For a spicier kick, add chili flakes to the tomato sauce.
