Easy Ground Turkey Shepherd’s Pie

A lighter take on the classic comfort food, this Easy Ground Turkey Shepherd’s Pie is made with lean ground turkey and topped with creamy mashed potatoes for a wholesome, satisfying meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups mashed potatoes (prepared in advance or store-bought)
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the diced onion and cook until translucent, about 3-4 minutes.
  4. Stir in the garlic and cook for 1 minute.
  5. Add the ground turkey and cook until browned, breaking it up with a spoon.
  6. Stir in the tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  7. Add the frozen mixed vegetables and cook for another 5 minutes until heated through.
  8. Transfer the turkey mixture into a baking dish and spread evenly.
  9. Spoon the mashed potatoes on top and spread to cover the meat mixture completely.
  10. Sprinkle with shredded cheddar cheese, if using.
  11. Bake for 20 minutes or until the top is lightly browned and the filling is bubbly.
  12. Let rest for 5 minutes before serving.

Notes

  • Make it ahead and refrigerate until ready to bake.
  • You can use leftover mashed potatoes or instant mashed potatoes for convenience.
  • Customize with your favorite vegetables.
