Chicken and Vegetables:

  • 2 pounds boneless skinless chicken breasts or thighs
  • 4 medium potatoes, cut into chunks
  • 3 large carrots, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Sauce:

  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Garnish:

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Ingredients: Place the potatoes, carrots, onion, and garlic in the bottom of a slow cooker. Lay the chicken on top of the vegetables.
  2. Make the Sauce: In a small bowl, whisk together the cream of chicken soup, chicken broth, thyme, paprika, salt, and black pepper. Pour the mixture evenly over the chicken and vegetables.
  3. Cook: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and the vegetables are cooked through.
  4. Finish and Serve: Before serving, shred the chicken if desired, stir everything together, and garnish with fresh parsley.
