Easy Creamy Salmon Florentine is a quick and delicious dish featuring seared salmon fillets in a rich, creamy spinach and garlic sauce. Perfect for a weeknight dinner or a special meal.

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Season salmon fillets with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the salmon fillets skin-side down first for about 4-5 minutes, then flip and cook another 2-3 minutes. Remove and set aside.
  3. In the same skillet, add butter and sauté the onions until translucent. Add garlic and cook for another minute.
  4. Pour in the chicken or vegetable broth and let it simmer for 2-3 minutes.
  5. Stir in the heavy cream and bring to a gentle simmer. Add Parmesan cheese and mix until melted and creamy.
  6. Add spinach and stir until wilted, about 2 minutes.
  7. Return the salmon to the pan and spoon the sauce over the fillets. Simmer for another 2-3 minutes until the salmon is heated through.
  8. Finish with a squeeze of lemon juice if desired. Serve warm.
