  • 2 ripe bananas (mashed)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Add-ins:

  • 1/2 cup chopped walnuts (or pecans)
  • 1 cup fresh or dried cranberries

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
  2. Mix wet ingredients: In a large bowl, whisk together mashed bananas, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Add mix-ins: Fold in the cranberries and chopped nuts.
  6. Bake: Pour the batter into the prepared loaf pan, smooth the top, and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
