Cod Piccata:

  • 4 cod fillets (about 6 ounces each)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil

Lemon-Caper Sauce:

  • 2 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped
  • Optional garnish: lemon slices

Instructions

  1. Prepare the Cod: Pat the cod fillets dry with paper towels. Season with salt and pepper, then dredge lightly in flour, shaking off excess.
  2. Cook the Cod: Heat olive oil and 1 tablespoon butter in a skillet. Cook cod fillets for 3–4 minutes per side until golden brown and cooked through. Transfer to a plate.
  3. Make the Sauce: In the same skillet, cook garlic until fragrant. Deglaze with white wine, then add chicken broth, lemon juice, and capers. Simmer until slightly reduced. Stir in remaining butter.
  4. Finish the Dish: Return cod to skillet, spoon sauce over fillets. Sprinkle with parsley and garnish with lemon slices before serving.
