Description

This Easy Cinnamon Roll Coffee Cake is a deliciously moist and tender cake that combines the flavors of classic cinnamon rolls with the ease of a simple coffee cake. Featuring a soft vanilla batter swirled with a cinnamon-sugar mixture and topped with a sweet vanilla glaze, it’s perfect for breakfast, brunch, or a cozy dessert.

Ingredients

Scale

For the Cake Batter

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 eggs
  • 1 tbsp baking powder
  • 1 tbsp vanilla extract
  • 1/2 tsp salt

For the Cinnamon Swirl

  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 3 tbsp melted butter

For the Vanilla Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking and set aside.
  2. Mix Batter: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Add the milk, eggs, vanilla extract, and melted butter. Mix until the batter is smooth and fully combined. Pour the batter evenly into the prepared baking dish.
  3. Create Cinnamon Swirl: In a small bowl, combine the brown sugar, ground cinnamon, and melted butter. Drop spoonfuls of this mixture over the top of the batter. Using a knife, gently swirl the cinnamon mixture into the batter, creating a marbled effect.
  4. Bake the Cake: Bake the cake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean, indicating the cake is cooked through.
  5. Prepare Glaze: While the cake is still warm, whisk together the powdered sugar, milk, and vanilla extract until smooth to make the vanilla glaze.
  6. Glaze and Serve: Drizzle the glaze evenly over the warm cake. Allow the cake to cool slightly before cutting into squares and serving. Enjoy your cinnamon roll coffee cake fresh!

Notes

  • For a richer flavor, use whole milk or substitute with buttermilk.
  • Ensure the cake is warm but not hot when drizzling the glaze to prevent it from soaking in too much.
  • You can add chopped nuts such as pecans or walnuts into the cinnamon swirl for extra texture.
  • This cake can be stored in an airtight container at room temperature for up to 3 days.
  • Reheat slices briefly in the microwave for a fresh-baked taste.
