Easy Cilantro Lime Coleslaw Recipe (10-Minutes)

A quick and refreshing cilantro lime coleslaw that’s perfect as a side dish or taco topping, made in just 10 minutes with fresh ingredients.

Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the green cabbage, purple cabbage, carrots, and cilantro.
  2. In a small bowl or jar, whisk together the lime juice, olive oil, honey (or maple syrup), garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the cabbage mixture.
  4. Toss everything together until evenly coated.
  5. Let the slaw sit for 5–10 minutes to allow flavors to meld, then serve.

Notes

  • For a spicier version, add a diced jalapeño or a pinch of cayenne pepper to the dressing.
  • Best served fresh but can be stored in the fridge for up to 2 days.
