- 3 lb chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and quartered
- 1 onion, sliced
- 3 cloves garlic, minced
Instructions
- Preheat your oven to 300°F (150°C).
- Season the chuck roast with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.
- Add onions and garlic to the pot and sauté for 2-3 minutes until fragrant.
- Deglaze the pot with beef broth and Worcestershire sauce, scraping up browned bits.
- Return the roast to the pot. Add carrots and potatoes around the roast.
- Cover with a lid and transfer to the preheated oven.
- Cook for 3-3.5 hours or until the roast is tender and easily pulls apart.
- Remove from oven and let rest for 10 minutes before serving. Serve with vegetables and pan juices.
Notes
- You can substitute beef broth with red wine for a richer flavor.
- Leftovers make great sandwiches or shredded beef tacos.
- Add celery for extra flavor and texture.
