Easy Chuck Roast Recipe

A simple and hearty chuck roast recipe that’s perfect for a comforting family dinner. Slow-cooked to tender perfection with vegetables and flavorful herbs.

  • 3 lb chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and quartered
  • 1 onion, sliced
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast with salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  3. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
  4. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.
  5. Add onions and garlic to the pot and sauté for 2-3 minutes until fragrant.
  6. Deglaze the pot with beef broth and Worcestershire sauce, scraping up browned bits.
  7. Return the roast to the pot. Add carrots and potatoes around the roast.
  8. Cover with a lid and transfer to the preheated oven.
  9. Cook for 3-3.5 hours or until the roast is tender and easily pulls apart.
  10. Remove from oven and let rest for 10 minutes before serving. Serve with vegetables and pan juices.

Notes

  • You can substitute beef broth with red wine for a richer flavor.
  • Leftovers make great sandwiches or shredded beef tacos.
  • Add celery for extra flavor and texture.
