Easy Chicken with Buttered Noodles (30-Minutes)

A quick and comforting dish made with tender chicken and buttery noodles, perfect for busy weeknights.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 8 oz egg noodles
  • 3 tablespoons unsalted butter
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook egg noodles according to package instructions. Drain and set aside.
  2. While noodles are cooking, season chicken breasts with salt, pepper, and garlic powder.
  3. In a large skillet, heat olive oil over medium heat. Add chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove and let rest.
  4. Slice the cooked chicken into strips or bite-sized pieces.
  5. In the same skillet, melt butter over low heat. Add the cooked noodles and toss to coat in butter.
  6. Add chicken back to the skillet and stir to combine. Warm through for 1-2 minutes.
  7. Top with grated Parmesan and parsley if using. Serve warm.

Notes

  • You can use rotisserie chicken to save time.
  • Try adding steamed broccoli or peas for extra nutrition.
  • Use garlic butter for an extra flavor boost.
