Ingredients

Main Soup:

  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28 oz) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 2 cups cooked shredded chicken
  • 1/2 cup small pasta (like ditalini or elbow)
  • 1/3 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil or parsley (for garnish)
  • toasted garlic bread or croutons (for serving)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook for 3–4 minutes until soft.
  2. Stir in garlic and red pepper flakes, and cook for 1 minute more.
  3. Pour in crushed tomatoes and chicken broth, then add Italian seasoning, salt, and pepper. Bring to a boil.
  4. Stir in pasta and cook according to package instructions until al dente, about 8–10 minutes.
  5. Reduce heat and add shredded chicken, Parmesan cheese, and half the mozzarella. Stir until the cheese is melted and the soup is creamy.
  6. Ladle into bowls and top with remaining mozzarella and chopped herbs.
  7. Serve with garlic bread or croutons.

Notes

  • Rotisserie chicken works great here.
  • You can make it extra cheesy by broiling the soup with mozzarella on top in oven-safe bowls.
  • Add spinach or zucchini for extra veggies.
