A quick and healthy chicken couscous salad that’s light, flavorful, and perfect for meal prep or a refreshing lunch.

- 2 chicken breasts, cooked and shredded
- 1 cup couscous
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp ground cumin
- Salt and pepper, to taste
Instructions
- Cook the couscous according to package instructions. Let it cool.
- In a large bowl, combine the shredded chicken, cucumber, bell pepper, red onion, and parsley.
- Add the cooled couscous and gently toss to combine.
- In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Top with feta cheese (if using), and serve chilled or at room temperature.
Notes
- This salad can be made ahead and stored in the fridge for up to 2 days.
- For extra flavor, add some olives or roasted vegetables.
- To make it dairy-free, omit the feta cheese.
