For the casserole:

  • 2 cups cooked chicken breast, shredded or diced
  • 3 cups broccoli florets, steamed until just tender
  • 1 cup cooked white or brown rice
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the topping (optional):

  • 1/2 cup crushed buttery crackers or breadcrumbs
  • 1 tablespoon melted butter

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Mix ingredients: In a large bowl, combine chicken, broccoli, rice, cream of chicken soup, sour cream, milk, 1 cup of cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Bake: Spread the mixture in the baking dish, top with remaining cheese, and the optional cracker/breadcrumb topping. Bake for 25-30 minutes until hot and bubbly.
