For the casserole:
2cups cooked chicken breast, shredded or diced
3cups broccoli florets, steamed until just tender
1cup cooked white or brown rice
1 (10.5 oz) can condensed cream of chicken soup
1/2cup sour cream
1/2cup milk
1 1/2cups shredded cheddar cheese, divided
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the topping (optional):
1/2cup crushed buttery crackers or breadcrumbs
1 tablespoon melted butter
Instructions
Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
Mix ingredients: In a large bowl, combine chicken, broccoli, rice, cream of chicken soup, sour cream, milk, 1 cup of cheese, garlic powder, onion powder, salt, and pepper. Mix well.
Bake: Spread the mixture in the baking dish, top with remaining cheese, and the optional cracker/breadcrumb topping. Bake for 25-30 minutes until hot and bubbly.
Serve: Let cool slightly before serving.
Notes
Rotisserie chicken works great for this recipe.
For a lighter version, use Greek yogurt instead of sour cream and reduced-fat cheese.
