1/2 teaspoon black pepper
1 teaspoon Italian seasoning
8oz fresh mozzarella cheese, sliced
1 large tomato, sliced
1/4cup fresh basil leaves
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons balsamic glaze (optional, for serving)
Instructions
Preheat the oven to 375°F (190°C).
Using a sharp knife, slice a pocket into the side of each chicken breast without cutting all the way through.
Season the chicken breasts with salt, pepper, and Italian seasoning.
Stuff each chicken breast with slices of mozzarella, tomato, and fresh basil leaves.
Secure the opening with toothpicks if needed.
Heat olive oil in a large oven-safe skillet over medium heat. Add garlic and cook for 30 seconds.
Sear the chicken breasts for 3-4 minutes per side until golden brown.
Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is cooked through.
Drizzle with balsamic glaze before serving if desired.
Notes
Use sun-dried tomatoes instead of fresh for a richer flavor.
