2 boneless, skinless chicken breasts
1 tablespoon Cajun seasoning
1 tablespoon olive oil
1cup long-grain white rice
2cups chicken broth
1/2cup diced onion
1/2cup diced bell pepper
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Instructions
Season both sides of the chicken breasts with Cajun seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Cook the chicken for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the diced onion, bell pepper, and garlic. Sauté for about 3-4 minutes until softened.
Add rice, thyme, paprika, and chicken broth to the skillet. Stir to combine and bring to a simmer.
Return the chicken breasts to the skillet, nestling them into the rice. Cover and reduce heat to low. Let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Fluff the rice and slice the chicken. Serve hot and enjoy!
Notes
You can use brown rice instead of white rice, but adjust the cooking time accordingly.
If you prefer spicier dishes, add extra Cajun seasoning or a dash of hot sauce to taste.
