1cup cherry tomatoes, diced
1/4cup fresh basil, chopped
2 cloves garlic, minced
1 tablespoon balsamic vinegar
1/4cup shredded mozzarella cheese
1 tablespoon olive oil (for the topping)
Instructions
Preheat the oven to 400°F (200°C).
Season the chicken breasts with olive oil, salt, and pepper.
Heat a skillet over medium-high heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
While the chicken bakes, prepare the bruschetta topping by combining diced tomatoes, basil, garlic, balsamic vinegar, and 1 tablespoon olive oil in a bowl. Season with salt and pepper to taste.
Once the chicken is done, remove from the oven and top each breast with the bruschetta mixture and a sprinkle of shredded mozzarella cheese.
Return to the oven for 3-5 minutes to melt the cheese.
Serve immediately, garnished with extra basil if desired.
Notes
For a more savory flavor, you can add a drizzle of olive tapenade on top.
