- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil

- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon olive oil (for the topping)
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with olive oil, salt, and pepper.
- Heat a skillet over medium-high heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- While the chicken bakes, prepare the bruschetta topping by combining diced tomatoes, basil, garlic, balsamic vinegar, and 1 tablespoon olive oil in a bowl. Season with salt and pepper to taste.
- Once the chicken is done, remove from the oven and top each breast with the bruschetta mixture and a sprinkle of shredded mozzarella cheese.
- Return to the oven for 3-5 minutes to melt the cheese.
- Serve immediately, garnished with extra basil if desired.
