Easy Beef Queso Dip Recipe

A quick and creamy beef queso dip made with ground beef, cheese, and a hint of spice—perfect for parties or game day snacking.

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb processed cheese (such as Velveeta), cubed
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tbsp chopped fresh cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 3 minutes.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Add ground beef to the skillet. Cook until browned and cooked through, breaking it apart with a spoon, about 5-7 minutes.
  4. Drain any excess grease, then stir in diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes.
  5. Reduce heat to low and add cubed processed cheese and milk. Stir continuously until the cheese is melted and smooth.
  6. Stir in shredded cheddar cheese until fully melted and combined.
  7. Transfer to a serving bowl or keep warm in a slow cooker. Garnish with cilantro if desired and serve with tortilla chips.

Notes

  • For a spicier version, use hot diced tomatoes with chilies or add jalapeños.
  • Can be made ahead and reheated in a microwave or slow cooker.
