Easy BBQ Chicken Tostadas Recipe

An easy and delicious BBQ Chicken Tostadas recipe perfect for a quick weeknight dinner. Crispy tostada shells topped with smoky BBQ chicken, melted cheese, and fresh toppings.

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 6 tostada shells
  • 1 cup shredded cheddar cheese
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shredded chicken with BBQ sauce until evenly coated.
  3. Place tostada shells on a baking sheet and brush lightly with olive oil.
  4. Evenly distribute BBQ chicken on each tostada shell.
  5. Add black beans, corn, and red onion on top of the chicken.
  6. Sprinkle shredded cheddar cheese over each tostada.
  7. Bake in the oven for 8-10 minutes, or until cheese is melted and bubbly.
  8. Remove from oven and top with diced tomatoes, fresh cilantro, and a dollop of sour cream if using.
  9. Serve immediately while hot and crispy.

Notes

  • You can use rotisserie chicken for convenience.
  • Customize toppings with avocado, jalapeños, or lettuce.
  • Use store-bought or homemade tostada shells.
