Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lb)
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp whole‑grain mustard (optional)
  • 1 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400 °F (200 °C). Lightly grease a baking dish.
  2. In a small bowl, whisk together Dijon mustard, honey, olive oil, whole‑grain mustard, vinegar, garlic powder, paprika, salt, and pepper until smooth.
  3. Place chicken breasts in the prepared baking dish. Spoon or brush half of the honey Dijon mixture evenly over the chicken.
  4. Bake uncovered for 20 minutes.
  5. Remove from oven, spoon remaining glaze over chicken, and return to bake for an additional 5–10 minutes, or until internal temperature reaches 165 °F (74 °C).
  6. Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Notes

  • You can substitute chicken thighs—bake for 25–30 minutes.
  • Make a double batch of sauce to serve extra as a dipping drizzle.
  • Try adding a pinch of chili flakes for heat.
  • Serve with rice, roasted veggies, or a light salad.
