This easy and flavorful mushroom chicken recipe features tender chicken breasts smothered in a creamy mushroom sauce, perfect for a comforting weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 tablespoon chopped parsley (optional, for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side, or until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt the butter and add the sliced mushrooms. Sauté for 5 minutes until they begin to brown.
  4. Add the garlic and cook for another minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Simmer for 3 minutes.
  6. Stir in the heavy cream and thyme. Let the sauce simmer for 5 minutes until slightly thickened.
  7. Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 5 minutes.
  8. Garnish with chopped parsley if desired and serve hot.

Notes

  • Use baby bella or cremini mushrooms for deeper flavor.
  • You can substitute heavy cream with half-and-half for a lighter version.
  • Serve over mashed potatoes, rice, or pasta for a complete meal.
