2cups cooked chicken, shredded
12oz spaghetti
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of chicken soup
1 can (10 oz) diced tomatoes with green chilies, drained
1cup chicken broth
2cups shredded cheddar cheese
1/2cup chopped onion
1/2 tsp garlic powder
1/2 tsp black pepper
Salt to taste
1 tbsp olive oil
Instructions
Preheat oven to 350°F (175°C).
Cook spaghetti according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Sauté onions until soft, about 3-4 minutes.
In a large bowl, mix together cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, chicken broth, garlic powder, black pepper, and salt.
Add cooked chicken, sautéed onions, and 1 cup of cheddar cheese to the mixture. Stir until combined.
Combine the spaghetti with the sauce mixture and stir until evenly coated.
Transfer the mixture to a greased 9×13-inch baking dish.
Top with the remaining 1 cup of cheddar cheese.
Bake uncovered for 25-30 minutes, or until bubbly and golden on top.
Let rest for 5 minutes before serving.
Notes
You can substitute rotisserie chicken for convenience.
Add chopped bell peppers or mushrooms for extra veggies.
