Cookies:

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • pastel-colored sanding sugar or sprinkles (optional)

Instructions

  1. Preheat oven and prep: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream softened butter and sugar until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
  4. Mix dry ingredients: In a separate bowl, whisk together flour, half of the Jello powder, baking soda, and salt.
  5. Combine wet and dry: Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Shape and bake: Scoop tablespoon-sized portions, roll into balls, coat with reserved Jello powder or sanding sugar, flatten slightly, and bake for 8–10 minutes.
  7. Cool and serve: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
