Dry Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients:

  • 1 cup unsalted butter (softened)
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup sour cream

Additional:

  • Food coloring (pastel pink, yellow, green, or blue – optional)
  • 2 cups buttercream frosting
  • 1 cup sweetened shredded coconut
  • Mini chocolate eggs or pastel sprinkles for decorating

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease/flour two 8-inch round cake pans.
  2. Prepare Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Mix Wet Ingredients: In a large bowl, cream butter and sugar, then add eggs and vanilla. Mix milk and sour cream in a separate bowl.
  4. Combine: Alternately add dry ingredients and milk mixture to the creamed butter, mixing until just combined.
  5. Bake: Divide batter, add food coloring if desired, bake for 28–32 minutes, then cool on wire racks.
  6. Decorate: Frost with buttercream, coat with shredded coconut, and adorn with chocolate eggs or sprinkles.

Notes

  • To create a “nest” effect, shape a ring of coconut in the center of the cake and fill with candy eggs.
  • Consider using cream cheese frosting for a tangier flavor.
  • The cake can be made ahead and refrigerated before decorating.
