Easter Basket Cookies Recipe

Easter Basket Cookies are festive, colorful treats made with sugar cookie dough shaped like baskets and filled with sweet decorations, perfect for springtime celebrations.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup shredded sweetened coconut (for topping)
  • Green food coloring (for grass effect)
  • Assorted Easter candies (mini chocolate eggs, jelly beans, etc.)
  • Optional: icing or melted chocolate for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Scoop tablespoon-sized portions of dough and shape into round balls. Flatten slightly and create an indentation in the center with your thumb or a spoon to form a “basket.”
  7. Bake for 10–12 minutes, or until the edges are lightly golden. Let cool completely on a wire rack.
  8. Tint shredded coconut with a few drops of green food coloring and mix until evenly colored.
  9. Fill each cookie basket with the green coconut “grass” and top with Easter candies.
  10. Optional: drizzle with icing or melted chocolate for added decoration.

Notes

  • You can prepare the dough a day ahead and refrigerate it.
  • Decorate the cookies just before serving to keep candies fresh.
  • Try different candies or pastel-colored frosting for variety.
