4 boneless, skinless chicken breasts
1cup plain Greek yogurt
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper, to taste
For the Rice:
1cup long-grain white rice
1 1/2cups chicken broth
1/2cup diced cucumber
1/4cup diced red onion
2 tablespoons chopped fresh dill
Instructions
Preheat the oven to 375°F (190°C).
Prepare the chicken by mixing yogurt, garlic, lemon juice, oregano, salt, and pepper in a bowl.
Place the chicken in a baking dish and coat with the yogurt mixture.
Add rice, chicken broth, cucumber, red onion, and dill to the dish.
Cover the dish with foil and bake for about 45-50 minutes, until the chicken is cooked through and the rice is tender.
Serve the chicken and rice with extra tzatziki sauce, if desired.
Notes
