Instructions

  1. Preheat Oven: Preheat oven to 425°F and place a large sheet pan inside to heat.
  2. Parboil Potatoes: Boil potatoes in salted water for 8–10 minutes until just fork-tender. Drain and let steam dry.
  3. Prepare Pan: Remove hot sheet pan, add duck fat to melt.
