1 cup shelled pistachios (unsalted)

  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt or sour cream
  • 1/2 cup whole milk
  • 3/4 cup mini chocolate chips (optional)
  • Chopped pistachios for topping

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Prepare pistachios: In a food processor, pulse the pistachios until finely ground. In a bowl, whisk together the ground pistachios, flour, cocoa powder, baking powder, and salt.
  3. Cream butter and sugar: In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla.
  4. Mix wet and dry ingredients: Stir in yogurt and milk. Gradually add dry ingredients, mixing just until combined. Fold in chocolate chips if using.
  5. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Top with chopped pistachios and serve plain or with a dusting of powdered sugar or chocolate glaze.
