Description

This Dominican Mashed Plantains with Pork Cracklings is a savory and comforting side dish featuring tender boiled green plantains blended with rich butter and crispy pork cracklings. Perfectly seasoned and easy to prepare, this dish offers a delicious twist on traditional mashed potatoes with a Caribbean flair.

Ingredients

Scale

Mashed Plantains

  • 3 green plantains
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup water (optional, if needed for consistency)

Pork Cracklings

  • 1 cup pork cracklings

Instructions

  1. Prepare the Plantains: Peel the green plantains by cutting off the ends and making shallow slits along the skin to easily remove it. Cut the peeled plantains into chunks for boiling.
  2. Boil Plantains: Place the plantain chunks in a large pot of salted water. Bring to a boil and cook until the plantains are tender when pierced with a fork, approximately 20 minutes.
  3. Drain Plantains: Carefully drain the cooked plantains to remove all water and transfer them to a large mixing bowl.
  4. Add Flavorings: Add the butter, pork cracklings, salt, and pepper to the bowl with the drained plantains.
  5. Mash Ingredients: Using a potato masher or fork, mash the plantains, butter, and pork cracklings together until smooth and well combined. If the mixture is too thick, gradually add up to 1/4 cup of water to reach desired consistency.
  6. Serve: Serve the mashed plantains hot as a delicious side dish alongside your favorite main courses.

Notes

  • Use green (unripe) plantains for the best texture in this dish; ripe plantains will be too sweet and soft.
  • Pork cracklings add a crunchy texture and salty flavor; substitute with fried bacon bits if unavailable.
  • Avoid over-boiling to prevent the plantains from becoming mushy and difficult to mash.
  • Adjust seasoning to taste, especially salt and pepper.
  • Serve immediately for best flavor and texture.
